Simple sopa de frijol a.k.a. black bean soup

This is an easy to prepare soup similar to the type they make in Xalapa, México. If you can find it, adding some hoja santa may add some good flavor from jungle of Veracruz. The spices may be adjusted to your liking. Great optional toppings for the finished product include, bacon, ham, cheese(s), fresh herbs, dollops of sour cream, and most savory or creamy foods that can be dolloped. 5.0 stars based on my 1 review.

  • Yield: 1 Liter (4 servings)

Ingredients:

  • Cooked black beans: 1 can
  • chicken broth: 1 can
  • Cholula Hot Sauce: 1 bottle
  • garlic powder: 1 tsp
  • salt: 2 tsp
  • black pepper: 1 tsp

Directions:

  1. Pour ⅓ of the chicken broth into a blender with the all of the beans
  2. Start the blender
  3. Add the remaining chicken broth till the consistency is slightly less than a milkshake or smoothie and the darker outer husks of the beans are evenly distributed
  4. Stop the blender
  5. Pour the contents of the blender into a cooking pot
  6. Add the garlic powder and black pepper
  7. Stir gently a stove with medium high heat till bubbles begin to appear
  8. Reduce the heat to bring the soup to a simmer
  9. Stir in the salt just before serving
  10. Shake on some Cholula hot sauce just after serving
  11. Add any other toppings and enjoy
